Kashmiri Mango Phirni


Basmati rice - 50 grams
Milk - 1 ltr
Cardamon pods - 5
Sugar - 125 grams
Almonds - 2 tsp
Raisins - 2 tsp
Mango puree - 100 grams
Cashewnuts - 2 tsp
Mango cubes for garnishing


Soak Rice in water for 1/2 hour. Grind Rice to a paste. In a pan add Milk and let it come to a boil.add the Cardamoms and simmer for few minutes.Add the Rice paste and cook for few minutes stir continuously.add Sugar, Almond flakes and Raisins and remove to a serving bowl and cool. Stir in the Mango puree and Cashewnuts.Chill this in the refrigerator and serve with mango cubes on top.
