Guacamole Brushetta

Ingredients:
French bread - ½ loaf
garlic - 1 clove
olive oil - 2 Tbsp
Tomatoes - 2 (chopped)
Avocados - 2 (chopped)
onion - 1/3 cup (finely chopped)
cilantro - ¼ cup (chopped)
Lime juice - 2 Tbsp
salt - ½ tsp
pepper - ¼ tsp
Method:

Preheat the oven to 400ºF.Slice the French bread on the diagonal into ½" rounds and place on a baking sheet.
Toast the sliced bread in the oven for 3 minutes, then flip each piece over and toast again.
Remove the toasted bread from the oven and rub with the clove of garlic.Brush the tops of the garlic-rubbed toasts with olive oil and set aside.In a bowl, combine the chopped tomatoes, avocado, onion, cilantro, lime juice, salt and pepper. Mix together gently making sure the avocado is well coated in the lime juice.Spoon the mixture onto each of the garlic toasts and serve.

Ooey Gooey Mexican Sandwich

Ingredients:

Bread - 2 slices
Mexican melting cheese - 1/4 cup
Roasted corn - 1/4 cup
Shredded Grilled chicken - 3 tbsp
Green chillies - 1
Lime wedge - 1/2
cummin butter - 1 tbsp

For cummin butter :


softened butter - 1 tbsp
garlic salt - a pinch
cumin - 1/2 tsp
chillie powder - 1/2 tsp
 
Method:


combine softened butter,garlic salt, cumin and chilli powder and keep aside

Smear some of the cumin butter on a slice of bread and place, butter side down, on warm griddle.
pile on some shredded cheese,corn,chicken,green chilli and more cheese.
Top with another slice of buttered bread.Grill until lightly golden.
squeeze a lime wedge on top before serving.
