Coconut Fried rice
Ingredients:
Cooked Rice - 1 cup
Coconut - 1 ½ cup
Mustard seeds - 1/2 tsp
Urad dal - 1/2 tsp
Cumin seeds - 1/2 tsp
Chana dal - 1 ½ tsp
Peanuts - 2 tsp
Cashew nuts - 15
Red chilies - 3
Green Chilies - 2
Curry leaves - 1 stem
Coriander leaves - little
Salt - to taste
Ghee - 3 to 4 tsps
Method:
Heat Ghee in a pan. Add Mustard seeds, Urad dal and Cumin seeds.Once it starts spluttering add Chana dal, Peanuts, Cashew nuts and fry for a minute.Add Red Chilies, Green Chilies, Curry leaves and fry till the dals turns into golden brown.Add grated Coconut, Salt and fry till the Coconut turns light-brown.Add the Cooked rice and mix well. Remove from heat and garnish with Coriander leaves.
