Apricot delight


Unsalted Butter - 4 tbsp
Fresh Apricots - 1 cup / 800grms
Sugar - 2 tbsp
Lemon - 1
Vanilla pod - 1 (optional)


Heat the butter and add the chopped apricots,then add the sugar and squeeze the lemon juice.Split the vanilla pod in half and add to the fruit and cook until the fruit is tender and the liquid reduced to a syrup.Serve Hot or cool.
