Tasty Rice Kheer


Ingredients :-


Basmati rice - 1/2 Cup
Sugar - 1/4 Cup
Cardamom - 5 finely powdered
Saffron - 3 pinches
Ghee - 1 tbsp
Cashews - 20
Pista - 20
Condensed milk - 2 tbsp
water - 1.1/2 cups
Milk - 3 cups

Method :-


Rinse rice and Keep it aside.Heat ghee in small pan and shallow fry cashew nuts - just until they turn light golden brown and keep aside. Place a thick bottomed vessel on stove and heat water.a pinch of cardamoms and pinch of saffron in water. Once the water starts to boil add rinsed Basmati rice.Let it cook on medium heat.stir Occasionally
and simmer it on low heat until all water gets almost absorbed.
Pour milk and Stir on medium low heat until milk starts to boil.
Add remaining powdered cardamom ,condensed milk and one more pinch of saffron, cashews, pistachios, sugar. Simmer on low heat so that milk gets nicely soaked by rice for few minutes.Finally pour one teaspoon melted ghee.Garnish with nuts, few strands of saffron and serve Hot or Cold.
