Mango vinaigrette


Ingredients:

Mango pulp - 1/2 cup
coconut milk - 2 tbsp
curry power - 1/2 tsp
Lime Juice - 2 tbsp
Lime zest - 1 tbsp
white vinegar - 1/4 cup
Olive oil - 1 cup
Salt & Pepper to taste


Method:


In a blender, blend all ingredients together except oil. Slowly drizzle in oil to emulsify the dressing, then sprinkle salt and pepper to taste. Transfer to a serving dish and serve.
